#MeatFreeMonday: spicy vegan tagine with couscous

This tasty tagine is easy to make and really filling!

1 – In a large high-sided pan, heat the oil over a medium-high heat. Add the onion and cook, until softened, about 5 mins. Add the garlic, carrots, pepper, stock, and spices and bring to the boil.

2 – Add the courgette, aubergine, raisins and half the coriander and continue cooking until tender, for about 25-30 mins. Season to taste.

3 – Prepare the couscous, following the packet instructions. Serve with the tagine and garnish with the remaining coriander.
