Thanks to our friends at Allrecipes.co.uk we're looking forward to a delicious dinner of dill and Garlic Salmon. Why not have a go yourselves and let us know whether you enjoyed it!
 
A large salmon fillet seasoned with minced garlic and a delicious combination of fresh dill and lemon and steamed in foil.
 

This recipe serves 6 people and is ready in 40 mins (15 mins Prep - 25 mins Cook)
 
Ingredients

·       675g (1 1/2 lb) salmon fillet
·       salt and freshly ground black pepper to taste
·       3 cloves garlic, minced
·       2 sprigs fresh dill, chopped
·       5 slices lemon
·       5 sprigs fresh dill
·       2 spring onions, chopped
 
Preparation Method
1.     Preheat oven to 230 C / Gas mark 8.
2.      Place salmon fillet on top of one piece of aluminium foil. Sprinkle salmon with salt, pepper, garlic and chopped dill. Arrange lemon slices on top of fillet and place a sprig of dill on top of each lemon slice. Sprinkle fillet with chopped spring onions.
3.      Cover salmon with second piece of foil and pinch together both pieces to tightly seal. Place on a baking tray or in a large baking dish.
4.      Bake in preheated oven for 20 to 25 minutes, until salmon flakes easily.
