'I'm fitting in my pre-pregnancy clothes!'

I have had a really positive week this week with lots to talk about. Where to begin? Well firstly, I’m now weighing in at 10stone 6lbs so that’s another 1.5lbs lost taking my total weight loss to 8lbs. To say that I am really pleased is an understatement as I honestly never believed that it would be this easy to make changes to your diet and lose weight. My healthy eating is beginning to filter through to the rest of the family now and it’s great that everyone is benefiting from small changes such as substituting butter for low fat spread etc.

At the beginning of the week Closer sent me some fab Graze packs courtesy of graze.com which were a lovely surprise and so yummy that I just wanted to gobble them up straight away. After a particularly long and trying day with the kids one of the snack packs was a perfect way to unwind with a cuppa. I seriously can’t recommend these enough and guilt free too (see pic!)

The next day I received a 'Bootcamp Arms' pack from Mama Mio which I started using that evening - It promises more honed and toned upper arms and 'less wobble when you wave' by using the system for just 4 minutes a day for 30 days! The cream is lovely and light and I was particularly impressed with the skin firming gel (which I used in other places as well as my arms.) This is a great addition to my somewhat limited skin care regime!
A highlight this week definitely has to be fitting into my pre-pregnancy jeans and my jodphurs - I am a riding instructor, incase you hadn't read last week's blog which you can here - I was so pleased to be able to ride again in my proper clothes rather than old leggings or tracksuit bottoms and although I didn’t get much riding done, due to getting soaked, it was great to be back in the saddle. My little boy started pre-school this week so I am hoping to have a little more time to ride/exercise which will hopefully help me shed a few more pounds!

It is becoming more of a habit now and I am spending much less time wondering what to eat and when. Looking forward to next week and to getting going with some exercise.

Spinach and Walnut pasta:

Nutritional Information per serving
Calories: 545
Protein: 17.1g
Carbs: 66.9g
Sugar: 5.6g
Fat: 25.0g
Saturates: 3.4g
Fibre: 6.6g
Sodium: 0.21g
Salt: 0.5g
Ingredients
63g pasta, uncooked weight
100 ml soya or rice milk
3/4 tbsp of olive oil
3/4 tbsp of flour, plain
1 pinch of oregano
1 pinch of nutmeg
1 pinch of black pepper
2 spinach, frozen
13 g walnuts
Cooking Instructions
1. Preheat oven to 190 degrees C.
2. Cook the pasta following package directions, omitting any suggested fat or salt.
3. Pour the milk and oil into a saucepan and sprinkle over the flour. Bring to a boil over a medium heat, whisking all time, to make a white sauce. Simmer for a couple of minutes, then add the herbs and the frozen spinach. Set aside to let the spinach thaw. Add the roughly chopped walnuts.
4. Once the pasta is cooked, drain it and stir it into the spinach sauce. Pour into an ovenproof dish and bake for 20 minutes.
